For Canada PR process, do we need a reference letter from all previous companies or only from last company?

You need letters of employment which is not a reference letter but you need them from everyone you worked for over the past 10 years

Yes. You need the reference letters from all previous companies that you mentioned in the Express Entry Profile. However, that being said, there are workarounds in the scenario where the employer refuse to give you reference letter or if the company is not operational. For example, you can ask your coworkers to provide you the reference and submit the bank statement to show the proof of experience. Hope this answers your question.
